The grains used are carefully selected for their quality and are ground in a traditional millstone like in the 18th century. What is the point in using this old fashioned process? The reason is simple: the millstone keeps the grains from getting hot and thus allows them to keep their flavor. This mustard is made out of white Burgundy wine and grains produced in Burgundy exclusively.
