Straight from France Black Rice from Camargue

Not to be confused with Canadian wild rice, this long-grain black rice is similar in aspect to wild rice from Canada, but it is in fact a different plant. It has a mild, nutty taste and the scent of fresh-baked bread. Uncooked, it is ebony in color; cooked it turns purple, thanks to its high anthocyanin content (the same pigment as in blueberries).

Cultivated in the wetlands of the Camargue region of southern France, this rice is similar to the Italian Venere rice, although it is originally from China, where it has been grown for centuries. It was know there as the “forbidden rice” because only the Emperor was allowed to eat it.

Rich in iron, fibers and minerals, this French rice is healthy, nutritious and tasty. It can be mixed with other rices if a milder taste is preferred.

Its cooking time is betwwen 30 and 40 minutes at low heat.
